Erika’s 11th birthday cake

My daughter, Erika, turned eleven this year and she is into the retro, hippie, peace, and bright stuff (just like her mommy). So I thought that it would be awesome to surprise her with a retro cake for her at her ‘cake decorating’ birthday party. She had no idea that this cake was even in the making, but let me tell you she was so surprised that she cried (and I am talking about the red face, can’t catch her breath kind of crying). This was my first attempt at a topsy turvy  cake and it turned out better than I thought it was going to. I made her name, the 11, and the flowers all out of gum paste and let them dry over night. I assembled the whole cake Friday and was ready to surprise her with it that night after dinner. Everyone thought that this cake was by far my best, I can’t wait to do more!
